3/4 cup firmly packed brown sugar
1/2 cup sugar
1/2 cup butter (not margarine), softened
1/4 cup shortening
1 1/2 tsp vanilla
1 egg
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup chocolate chips

 
 
Heat oven to 375 degrees. In large bowl, beat brown sugar, sugar, butter and shortening until light and fluffy. Add vanilla and egg; beat well. Add flour, baking soda and salt; mix well. Stir in choco chips. Drop spoonfuls 2 inches apart on cookie sheets. Bake at 375 for 8-10 minutes.

2 cups sugar
1/3 cup shortening
1/4 cup dry milk
1/2 cup water
3 cups oatmeal
1/4 cup cocoa
1/2 cup peanut butter
1/2 teaspoon vanilla
In sauce pan over medium heat mix sugar, shortening, dry milk and water. Heat to boiling. Remove from heat. Add oats, cocoa, peanut butter and vanilla. Drop onto waxed paper by spoonfuls. Allow to cool. Makes 30 cookies. Enjoy!

CHERRY GARCIA COOKIES

INGREDIENTS:
1 cup dried cherries
1/4 tsp salt
1/2 tsp baking soda
1-1/2 cups flour
1/2 cup (1 stick) butter, at room temperature
1/2 cup granulated white sugar
1/2 cup light brown sugar, (packed)
1 egg
1-1/2 tsp vanilla extract
1/4 tsp almond extract
3/4 cup white chocolate chips
1/2 cup semi-sweet chocolate chips
1/2 cup coarsely-chopped macadamia nuts (optional)
PREPARATION:
Preheat oven to 350 degrees F. Line cookie sheets with parchment paper liners.

Place dried cherries in a bowl and cover with boiling water.
Let sit 30 minutes to plump up. Drain well, pat dry, and coarsely chop.

Whisk together salt, baking soda, and flour in a small bowl. Set aside.

In a large bowl, cream together butter, white sugar, and brown sugar. Beat in egg, vanilla, and almond extract. Add flour mixture to butter mixture half at a time and mix until combined. Fold in cherries, white chocolate chips, semi-sweet chocolate chips, and macadamia nuts. Refrigerate cookie dough 30 to 45 minutes to firm up.

Drop dough by the tablespoon onto prepared baking sheets, placing cookies about 1-1/2 to 2 inches apart. Bake 12 to 14 minutes until lightly browned around the edges. Cool 10 minutes on cookie sheets before removing to racks to cool completely. Store in a covered container.

Yield: about 36 cookies

1 cup coarsely chopped macadamia nuts
1 cup coarsely chopped white chocolate (or use white chocolate chips)

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla and almond extracts. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Mix in the macadamia nuts and white chocolate. Drop dough by teaspoonfuls onto ungreased cookie sheets.

Bake for 8-10 minutes in the preheated oven, until lightly browned.

1/2 lb unsalted butter, room temp. (really soft)
1 cup lgt. brn. sugar, packed
1 cup granulated sugar
2 teaspoons pure van. extract
2 extra large eggs (Room Temp.)
2/3 cup good unsweetened cocoa
2 cups flour
1 teaspood baking soda
1 teaspoon Kosher salt

Preheat oven to 350 degrees

Cream the butter and both sugars until light and fluffy. In the
bowl of an electric mixer add vanilla, then eggs (one at a time)
and mix well. Add cocoa and mix again. Sift together the flour, baking soda, and salt.....add to chocolate on low speed until just combined.

Line your coolie sheet with parchment paper. Drop by scoops and bake 15 minutes.

Sprinkle sugar on top when you remove from oven.

6 squares BAKER'S Semi-Sweet Baking Chocolate, coarsely chopped
or Substitute 1 cup BAKER'S Semi-Sweet Chocolate Chunks for the chopped chocolate squares.


PREHEAT oven to 375°F. Mix flour, oats, baking soda, baking powder and salt; set aside.
BEAT sugars, margarine and peanut butter in large bowl with electric mixer on medium speed until light and fluffy. Add egg and vanilla; mix well. Gradually add flour mixture, mixing until well blended after each addition. Stir in chopped chocolate. Drop heaping tablespoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
BAKE 10 to 12 min. or until lightly browned. Cool 1 min.; remove from baking sheets to wire racks. Cool completely.

Sift & add:
2 c. flour

In a large bowl, use an electric mixer to cream the butter or margarine. Add vanilla and sugars, and beat until fluffy. Beat in egg. At low speed, beat in cocoa, then milk. With a wooden spoon, mix in the flower mixture just until blended. Stir in chocolate chips. (And nuts, optional) Drop by rounded teaspoonfuls onto greased sheet. Bake at 350 degrees for 12 to 13 minutes.

To make Anytime Cookies we have 10 simple steps to make this delicious recipe!

#1: Cream together butter, brown sugar, and white sugar.

MeMa's Oatmeal Cookies
1 cup shortening
1- ½ cups packed brown sugar

1-1/2 cups uncooked rolled oats
1 cup raisins and 1 cup nuts (This could also be 2 cups of semi-sweet chocolate chips :)
Cream the shortening and brown sugar until fluffy. Add the beaten eggs one at a time, beating well after each addition. Sift the dry ingredients together and add alternately with the milk, blending after each addition. When well mixed, blend in the oats, raisins, and nuts. Drop by teaspoonfuls onto a greased cookie sheet. Bake at 350 F for about 12 to 15 minutes, depending on how chewy or crisp you prefer. Makes about 5 dozen of delicious cookies! The recipe can be halved.

1 bag of sweetened coconut (I use the “Mounds†brand)

Heat oven to 365 degrees F.

Stir flour with baking soda and salt; set aside.

In large mixer bowl, cream butter with sugar, brown sugar, eggs, liqueur, and vanilla.

Gradually blend dry mixture into creamed mixture. Stir in coconut and chocolate chips.

Drop by tablespoon onto ungreased cookie sheets. Bake at 365 degrees for 10-15 minutes or until golden brown. For softer cookies, remove on the low end, for firmer cookies, bake longer.

Makes about 4 dozen 2-1/2 inch cookies.

`1/2 cup confectioners' sugar

`1/3 cup apricot preserves, or preserves of your choice
`1/2 teaspoon chipotle chile powder
`4 eggs
`1 3/4 cups white sugar
`3/8 cup lemon juice
`1/3 cup all-purpose flour
`1 teaspoon baking powder
`1/4 teaspoon salt
`1/3 cup confectioners' sugar for dusting
`1/2 teaspoon chipotle chile powder
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch square pan.
2. Combine 2 cups flour, butter, 1/2 cup confectioners' sugar, and 1/2 teaspoon chipotle chile powder in a food processor; pulse until mixture resembles coarse crumbs. Press the mixture into the prepared pan.
3. Bake in preheated oven for 30 minutes, or until firm and golden. Remove from oven and allow to cool at least 20 minutes in the pan.
4. Reduce oven temperature to 325 degrees F (165 degrees C).
5. In a small bowl, whisk together the preserves and 1/2 teaspoon chipotle chile powder; spread over the cooled crust. Whip eggs with a wire whisk until foamy. Beat in sugar, lemon juice, and salt until the sugar has dissolved. Sift together 1/3 cup flour and baking powder; whisk into eggs until smooth. Pour onto the preserve-topped crust.
6. Bake in preheated oven an additional 35 to 40 minutes, until the center of the egg mixture has set. Sift together 1/3 cup confectioners' sugar with 1/2 teaspoon chipotle powder, and sprinkle over hot lemon bars. Cool completely before cutting into bars.
Original recipe yield: 16 bars

1 box of cake mix-any flavor (lemon and strawberry are great)
2 1/4 cups of frozen whipped topping, thawed
1 large egg
powdered sugar
non-stick spray

Blend cake mix,cool whip and egg until completely mixed. Spoon some powdered sugar into a bowl. Spoon dough out,form into small ball and roll in powdered sugar. Place on cookie sheet sprayed with non-stick spray and bake at 350 for 10-15 minutes or until lightly brown. Enjoy!!

Toffee Chip Cookies
Approximately 5 – 6 dozen
Preheat Oven to 350 degrees



½ cup brown sugar (you can substitute brown sugar Splenda)
½ cup white sugar (you can substitute white Splenda)
1 cup butter Crisco (Do not substitute; you need the Crisco to make this recipe work)

1 egg
1 tsp. vanilla
2 tsp. water

2 ¼ cups Flour
1 tsp. baking soda
1 tsp. salt

1 12oz. Heath Bit of Brickle or Hershey’s Skors if you like chocolate

Cream butter Crisco and sugars. Add egg, vanilla, and water. Mix together. Add flour, soda, salt and mix well, then add the toffee chips.

Drop 1†balls onto a greased cookie sheet. Dip the bottom of a glass into sugar, and “flatten†each ball with the bottom of a glass.

Bake at 350 degrees for 9 – 10 minutes. Remove promptly from the cookie sheet onto parchment or waxed paper. Do not over bake! The cookies will look slightly under cooked, and that is what you want.

It was a pleasure hearing you - and as you suggested at the Summit I am adding one of my own cookie recipes. My 6 year old son loves "The Cookie Thief!" book you autographed for me. Thanks for sharing and opening your life with all of us.

2 eggs
2 cups all purpose flour
4 oz. (Imperial) margarine
1 cup sugar
2 teaspoon baking powder
1/4 teaspoon salt
2 teaspoon cinnamon powder

It's recommended that all refrigerated ingredients reach room temperature before mixing. You may use any type of margarine you like. I have had great results with Imperial. Unsalted butter can be used instead. I have not tried replacing with shortening nor apple sauce.

1 - Grease a cookie sheet (use the wrapper from the bar of margarine) or use parchment paper
2 - Pre-heat the oven to 425 degrees.
3 - Beat the eggs in a bowl with a whisk and set aside.
4 - Beat together the margarine and sugar on a separate bowl until creammy.
5 - Once the margarine and sugar are well blended, add the beaten eggs to the mix.
6 - Mix all dry ingredients (flour, baking powder, salt and cinnamon) in a separate bowl.
7 - Add the dry mix to the butter-egg and sugar mix.
8 - Make balls with the mix about the size of a golf ball.
9 - Place some sugar & cinnamon on a bowl and mix.
10 - Take each cookie ball and roll around in the cinnamon & sugar mix
11 - Place on greased cookie sheet
12 - Bake in oven approximately 7 minutes or so.
13 - Carefully take the cookies out of the oven and place the sheet on a corner to cool. Once the cookies cool off, they can then be taken off the cookie sheet. If you used parchment paper, simply slide the paper with the cookies off from the sheet onto the counter and let cool.

This recipe from my close friend Vicki makes unbelievably good cookies. My helpers love to roll the dough and cut cookies into shapes for any season!

2 cups white sugar
1 cup margarine (softened)
3 eggs (or 4 egg whites to reduce cholesterol)
2 tsp almond extract
1/2 cup sour cream
5-6 cups flour
1 tsp baking soda
1/2 tsp cream of tarter
1/2 tsp salt

[color=red]Mix dough in order of ingredients.
Chill dough for 4 hours to over night. [/color]

[color=green]Preheat oven to 350 degrees.
Cover a flat surface and rolling pin with flour, roll out cookies. The rolled dough should be about 1/4 inch thick. Cut into shapes.

Bake 8 min on greased cookie sheet![/color]

For extra fun sprinkle colored sugar on top before baking.
For messy fun, frost cookies after cool.

These were my favorite cookies as a child. My aunt Cindy made them each Christmas. When I got my first apartment, my Christmas gift from Cindy was the ingredients for these cookies. What a great way to pass on a lovely memory. Now I make them with my boys.

2 cups white sugar
2 eggs
1 cup shortening
1 cup molasses
1 cup hot water with 2 tsp baking soda dissolved in it
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1/2 tsp cloves
6-8 cups flour (enough so dough is not sticky)

Roll on floured surface to 1/2 inch thick. Cut with cookie cutters.
Bake 8-10 min at 375 degrees.

Grandma Holbin's Pineapple Peanut Cookies

1 cup brown sugar
1 cup white sugar
1 cup shortening
2 eggs
1 tsp baking soda
1 tsp baking powder
3 1/2 cups flour
1 can crushed pineapple
1/2 cup peanuts

Cream shortening, sugar and eggs. Mix in pineapple then flour, baking powder and baking soda. Add peanuts. Bake at 375 for 12 to 15 minutes.

3 well beaten eggs
1 cup of raisins
1 tsp. vanilla extract
1 cup of softened butter
1 1/3 cups packed brown sugar
3/4 cup granulated sugar
2 1/2 cups all purpose flour
1 tsp salt
1 tsp cinnamon
2 tsp baking soda
2 cups quick cooking oatmeal
3/4 cup chopped pecans (optional)

Combine eggs, raisins and vanilla in bowl and cover. Let stand for 1 hour. Preheat oven to 350 degrees. Cream together butter with sugars, add flour, salt, cinnamon, baking soda and mix well. Add raisin mixture, oatmeal. Dough will seem dry. Drop by tablespoons an inch apart on ungreased cookie sheet. Bake 10 to 12 minutes until lightly browned. Cool on rack.

Chocolate Turtles

½ c. Margarine, melted and cooled 1 c. flour
¾ c. sugar 1 tsp. Vanilla
2 eggs Chocolate Frosting
6 T. baking cocoa Walnut Halves

1. Grease waffle iron. Turn heat setting to “Waffleâ€
and preheat until light turns off. (It’s ready then)
2. Combine melted,cooled margarine with sugar in medium
size mixing bowl.Beat well with electric mixer.
3. Add: eggs, cocoa, flour and vanilla. Mix well.
4. Drop spoonfuls of cookie dough on hot waffle iron.
5. Cook for about 1 - 1 ½ min. until set.
6. Remove with fork. Cool
7. Frost. Put one walnut half on top of each cookie.

YOUNG PEOPLE’S DREAM

Ingredients
1 c butter, softened
½ c confectioner’s sugar
1 c flour
1 c potato starch flour
½ tsp vanilla


Preheat oven to 350 degrees.


Cream butter and sugar together. Add flours and vanilla.

Roll dough into very small balls (or use the smallest ice cream scoop and cut each one in half. Flatten each ball with a fork if desired.

Bake 12-15 minutes.

Cool and roll in more confectioner’s sugar.


Variation: use almond extract and press an almond into the top of the cookie prior to baking.
